Instructions
Butter a pie plate and set it aside.
Dice 2 large apples into thin slices. Set aside.
Fluff whole wheat flour with a whisk, then measure out.
In a mixing bowl, measure out flour, baking powder, salt and cinnamon. Whisk all 4 ingredients together.
In a separate bowl, measure out butter and honey. Cream the two together.
One at a time, add eggs to the creamed mixture. Make sure they're well combined!
Measure out 3/4 C of milk.
Take your creamed mixture and the milk. Alternate adding these two things to the dry ingredients, stirring a bit after each addition.
When everything is combined and you have a cake batter, spoon 1/3 of it into your greased pie pan. Smooth.
Take the diced apples and evenly spread them on top of the first layer of batter.
The remaining batter can be gently spread on top of the apples. Level and smooth it out.
Bake immediately in an oven warmed to 350F for approximately 30 minutes.
Make sure you don't over-bake this one; pull it out of the oven just after the center has set and is no longer jiggly.
Serve with whipped cream or perhaps a bit of hot applesauce!
